It’s hard to beat a great Tuna Melt and this recipe is a cracker for using up those little bits of left-over Anchor Cream Cheese. (But by all means, go out and grab new a tub and make as many as you want, we do, regularly!) 

 

Tuna Melt
Method
  1. Mix the red onion, celery, mayonnaise, Anchor Cream Cheese, chives, capers, and lemon juice in a medium bowl. Mix through the drained tuna and season generously with freshly ground pepper. Taste for saltiness and add up to 1 tablespoon of the caper brine as needed.
  2. Spread the butter on one side of each piece of bread. Turn four slices buttered side down and place a slice of Cheddar cheese on top. Divide the tuna mixture evenly over the cheese. Top each one with the remaining 4 bread slices, buttered side up.
  3. Heat a large cast-iron skillet over medium heat. Working in batches if needed, place the sandwiches in the skillet and cook, turning once and pressing down with a fish spatula to ensure good contact with the hot surface. Cook until the sandwich is golden brown and crisp and the cheese is melted – about 4 minutes per side.
  4. Transfer the sandwiches to a cutting board and slice in half. Serve with dill pickles and kettle-style potato chips doused with hot sauce.
