The Ultimate Roast Potatoes

These roasted potatoes are to die for. They’re roasted in Anchor ™ Ghee for a super-crunchy and crispy outer texture that is so moreish you’ll want them all for yourself. 

Ingredients
Method
  1. Preheat your oven to 225°C. Place a large roasting dish inside to heat up.
  2. Place the potatoes in a large pot, just cover with water and salt well. Bring to a boil and cook until parboiled. (You want the potatoes just tender on the outside and not cooked all the way through.) Drain the potatoes and let them cool slightly until they stop steaming.
  3. While the potatoes cool, add the Anchor ™ Ghee to the hot roasting dish and return it to the oven to heat for 10 minutes.
  4. Sprinkle the semolina flour over the potatoes, cover the pot with a lid and shake until the potatoes are roughed up a little and completely coated with the flour.
  5. Remove the dish from the oven and gently tip the potatoes into the hot ghee. Spread them out evenly and roast for 30 minutes. Then turn the potatoes and roast for a further 15 minutes, then turn again and roast for another 15 minutes or until the potatoes are golden and crunchy.
  6. While the potatoes finish roasting, add the mango chutney to the Anchor Protein+ Yoghurt and swirl through gently.
To serve
  1. Tip the roasted potatoes into a serving bowl and sprinkle over the finely chopped spring onions (if using). Serve the swirled yoghurt chutney on the side – it’s a revelation, we suggest you try it!
