Mac'n Cheese

This is Mac‘n Cheese, but maybe not as you know it. Using Anchor ™ Ghee adds a nutty aroma and flavour to this easy yet delicious classic. It’s a super-simple, cracking recipe that you have to try

Method
  1. Melt the 50g of Anchor ™ Ghee in a large saucepan over a medium heat. Stir in the flour to form a paste and cook for 1 minute, stirring constantly.
  2. Add the milk a little at a time while whisking constantly until you have a thick white sauce.
  3. Remove from the heat and add both the cheeses, whisking to combine. Season to taste, cover and set aside. (You can make the sauce several hours ahead, just reheat before serving.)
  4. Cook the macaroni in a large pot of salted boiling water until al dente, then drain and return to the pot. Pour the hot cheese sauce into the pot with the drained pasta and mix through.
  5. Tip the cheesy pasta into a large rectangular serving dish and top with the toasted breadcrumbs for a final flourish before serving.
Garnish
  1. Heat 1 cup Ghee in a large fry pan on a high heat. Once the ghee is hot, carefully add the breadcrumbs and thyme. Cook, tossing occasionally until the crumbs are golden brown and crunchy. Place in the oven to keep warm.
