Dal Curry

Dal curry is an Indian vegetarian delight. Packed with flavour, it is nutritious, moreish and has an intoxicating aroma. Cooking with lentils is easy, so if you’ve never tried then this recipe is a great place to start.

  1. Heat the Anchor ™ Ghee in a heavy-bottom saucepan on a medium heat.
  2. Add the chilli and cook for 1-2 minutes. Add the onion and cook for five minutes or until softened.
  3. Reduce the heat to low and add the garlic, ginger and curry leaves (if using), and cook for 1-2 minutes, stirring frequently. Add the tomato and cumin, then stir and cook until it thickens slightly.
  4. Add the lentils, water and turmeric and stir until combined.
  5. Bring to a gentle simmer, then cover and cook for 1 hour, stirring every 15 minutes.
  6. After an hour, remove the lid and cook uncovered for a further 15-20 minutes, stirring occasionally until the curry reaches the consistency of porridge.
  7. While the curry finishes cooking, cook the rice. Just before serving, stir the garam masala into the curry and season to taste.
Garnish
  1. Heat the Anchor ™ Ghee in a fry pan on a high heat. Once hot, carefully place the curry leaves into the ghee and cook until they’re nice and crispy. Lift out with a slotted spatula and drain on paper towels.
To Serve
  1. Garnish each dish with the crispy curry leaves and serve with the rice and naan bread.
