Butter Chicken

This Butter Chicken is layered with spices and features our new Anchor ™ Pure Ghee, giving the dish a warm, authentic and comforting feel. Pair it with naan bread and fluffy basmati rice and curry night is on!

  1. Heat the Anchor™ Ghee in a large saucepan or casserole on a high heat. Brown the chicken in batches and set aside. Don’t wash the saucepan.

  1. Reduce the pan to a low-medium heat. Add the onion and cinnamon stick and cook for 15-20 minutes, stirring frequently, until the onions are a dark golden colour.
  2. Add the garlic and ginger and cook for a minute, then add the paprika, garam masala and cardamom and cook for a further minute.
  3. Stir through the tomato purée and cook for two minutes, then add the cream and ghee and stir well. Remove from the heat and take the cinnamon stick out.
  4. Use a stick blender to blitz to a smooth sauce. (Take care not to splash yourself.) You can also tip the mixture into a blender to process.
  5. Return the sauce to the pan with the browned chicken and cook over a low heat for a further 10-15 minutes to heat everything through and ensure the chicken is fully cooked.
To Serve
  1. Serve the Butter Chicken with fragrant basmati rice, our very own Garlic & Herb Naan Bread and garnish with the fresh coriander and toasted almonds.
