Carrot Halwa

This traditional Northern Indian dessert is a delight to make. Carrots are gently simmered in milk until tender, then scented with cardamom and topped with nuts. It’s a sweet treat that you must try.

  1. Bring the milk to a boil in a large saucepan. Add the grated carrot and reduce the heat to medium. Simmer the carrots, stirring often, until the milk has evaporated.
  2. Add the sugar to the carrots (this helps them to release more moisture) and cook until half the moisture has evaporated.
  3. Add the Anchor™ Ghee and cardamom and cook until all the moisture has gone and the carrot mixture has thickened and is aromatic.
  4. Serve warm or chilled, garnished with the pistachio nuts.
