Besan Ladoo - Sweet Indian Treat

This dish is a labour of love, but rewards you with delightful little sweet treats that are perfect for sharing or gifting to loved ones.

  1. Melt the Anchor™ Ghee in a heavy-bottom pan on a medium heat. Once melted, reduce the heat to low and stir in the chickpea flour.
  2. Continue stirring the flour and ghee together. It will form a clump at first, but keep stirring and it will start to loosen up after 7 or 8 minutes. Keep stirring as the mixture becomes looser and lighter – continuous stirring will stop the flour burning.
  3. After around 15 minutes of stirring you should have a smooth paste-like consistency. This can take up to 30 minutes sometimes, so don’t panic if it takes longer than expected.
  4. Remove the pan from the heat and keep stirring for another 5 minutes until the mixture has cooled a little.
  5. Add the sugar and cardamom powder and mix until everything is well combined.
  6. Pinch a small tablespoon sized portion from the dough. Press it between your palms and then roll between them to form a ball. Repeat with the remaining dough, making all the balls the same size.
  7. Roll each ball in the chopped nuts or scatter nuts over the top and then store in an airtight container.
