  1. Make the raspberry jelly according to the packet instructions. Pour it into a square container (any size is fine) and refrigerate until set. You can do this the day before. Once set, cut the jelly into small cubes and set aside in the fridge until ready to use.
  2. Trifle: It’s time to get creative and build your trifle pavlova. Whip the Anchor Cream to soft peaks. Place a layer of mini meringues in the base of the trifle bowl. Crush them slightly and then add some cubes of raspberry jelly and sponge cake. Add large dollops of whipped cream, then some berries, followed by dollops of Anchor Custard.
  3. Continue building your trifle pavlova with all the various ingredients in layers until you’ve filled the bowl. Be as artistic as you like.
  4. Once the trifle bowl is full, pile it a little higher with a topping of whipped cream, then cover it with chocolate shavings and garnish with sprigs of mint. Keep in the fridge until ready to serve.
