  1. Make the raspberry jelly according to the packet instructions. Pour it into a square container (any size is fine) and refrigerate until set. You can do this the day before. Once set, cut the jelly into small cubes and set aside in the fridge until ready to use.
  2. Whip the Anchor Cream to soft peaks. Dollop half on top of your gorgeous pavlova and spread over evenly. Carefully place some fruit and cubes of sponge cake and raspberry jelly on top. Cover with several spoonfuls of the Anchor Custard and repeat with another layer until the pav can take no more deliciousness
  3. To finish, garnish with some chocolate shavings and a few springs of mint and you’re ready to serve.
  4. Tip – make your Pavlova Trifle just before you’re ready to serve it so everything is fresh and looking fabulous.
