Chive Cottage Cheese Frittata



A frittata is a great way to pack in loads of veggies and, in this case, loads of protein with our Anchor Cottage Cheese with Chives. This frittata is simple to make and great for sharing at family and festive occasions. 

Ingredients
Chive Cottage Cheese Frittata
  1. Heat a tablespoon of olive oil in the non-stick frying pan over medium heat. .
  2. Add the spring onions and sauté for 5-6 minutes, then add the broccoli and cook for 3-4 minutes
  3. Add the spinach and stir through until it wilts, followed by the peas.
  4. Preheat your oven grill to high.
  5. In a bowl, whisk together the eggs, a pinch each of salt and pepper, and 200 grams of the Anchor Cottage Cheese with Chives.
  6. Tip the egg mixture into the pan, making sure it fills it all the way around. Dot a few teaspoons of the remaining cottage cheese on top.
  7. Cook over medium heat for 10 minutes until the egg mixture is almost set, then place the pan under the grill for a further 4-5 minutes or until the frittata is golden brown and the egg is cooked all the way through.
  8. Slide out of the pan onto a board or platter and serve warm.
