Chilli Fried Eggs

Level up your morning eggs by frying them in our Anchor™ Ghee. With a rich aroma and taste and a high smoke point, ghee is the perfect passport to crispy fried eggs. These eggs have the delicious bonus of being served on toasted pitas with sliced avo, mango chutney and yoghurt, and a scattering of chilli and coriander.

  1. Heat the Anchor™ Ghee in a medium-sized fry pan on a high heat. Once hot, add half the chilli, cook for 30 seconds, then crack in the eggs and cook until they’re golden and crispy around the edges. Remove the pan from the heat.
To Serve
  1. Put the yoghurt into a small bowl, add the mango chutney and gently swirl together, but don’t mix completely.
  2. Place a toasted pita bread on each plate. Top with half the sliced avocado and two of the crunchy fried eggs. Dollop over some of the yoghurt/mango swirl, and garnish with coriander and the remaining chilli.
