Creamy Overnight Oats with No-Cook Berry Compote

These overnight oats are the perfect solution to the busy morning rush. Prepare the night before and they'll be ready to grab as you head out the door. Paired with a delicious berry compote you'll have a new breakfast treat!

Method
  1. Make the compote. Pour the boiling water over the berries and mash them a lightly with a fork.
  2. Stir in the chia seeds and syrup and set aside. Mixture will thicken slightly as it cools.
  3. In a medium bowl combine the oats, chia seeds, grated apple and milk. Mix lightly and divide between to glasses or bowls approx 300 ml capacity.
  4. Add a generous dollop of Greek yogurt and ¼ of the compote to each then Place in fridge overnight. To serve add a dollop more yogurt and top with remaining compote and a sprinkle of coconut flakes if desired.
  5. Tip: Make in lidded containers for an easy portable breakfast to take to the office. Add a drizzle of honey or use a sweetened yogurt if you prefer.
