Cheese Pineapple Tarts

Egg Wash
Method
  1. Preheat oven to 180C.
Making the Crust
  1. Blend the cheese slices with corn starch and plain flour.
  2. Cream icing sugar together with butter until light and fluffy.
  3. Add egg yolks, one at a time, then add the whole egg last.
  4. Add in the flour cheese mixture to the egg butter mix in 3 parts, mixing after each addition.
Rolling & wrapping the Pineapple Tarts
  1. Prepare by rolling the pineapple filling into 6g cylindrical rolls.
  2. Press out a strip of tart pastry about 6cm long, place pineapple filling onto the strip, roll up.
  3. Brush the top of the tarts with egg wash.
  4. Bake in oven on greaseproof paper for 10 mins or until golden brown.
