Baked Mackerel with Cheese and Coconut Floss

Baked Mackerel with Cheese & Coconut Floss

A 10 minute dish with New Zealand Dairy Goodness.

Ingredients
Method
  1. Clean the mackerel fish, rub with a little salt and pepper.
  2. Arrange the mackerel fish in a baking tray that has been greased with Anchor™ Unsalted Butter.
  3. Spoon enough coconut floss over the mackerel fish.
  4. Sprinkle slices of turmeric leaves, kaffir lime leaves and red chili slices.
  5. Bake the mackerel fish in a preheated oven at 180°C - 190°C for 8 – 10 minutes.
  6. Remove the baking tray, place 4 pieces of Anchor™ Cheese Slices on top of the mackerel fish.
  7. Put the baking tray back into the oven and bake for another 3 - 4 minutes. Serve hot.
