Rendang Chicken with Cheese

(A) Spice Base
(B) Rempah
Method
  1. Pre-heat oven to 180C.
  2. Blend the rempah ingredients in a food processor until it has a fine paste consistency.
  3. Add the blended rempah (B) and (A) with the butter to your wok, stir fry for 5 minutes until fragrant.
  4. Add the chicken and mix well with the spice paste, cook for 5 minutes.
  5. Add chicken stock and deglaze wok.
  6. Add cream and cook on low for an hour.
  7. Place cheese slices over rendang and bake for 3 minutes until melted.
